What could be more refreshing on a hot day than a sorbet? And watermelon flavored? Even better. If you are looking for a cool snack, or looking for a fancy refreshment at a summer party, the watermelon sorbet has got you covered!

This year for the Fourth of July I celebrated by making this sorbet to go with chocolate chip cookies (click here for the recipe)

It goes very well as a light, cool, refresher after a hearty baked good such as a cookie or maybe even a cinnamon roll!

Ingredients

6 cups of watermelon cubed and frozen
3/4 cup banana sliced and frozen
1/2 Lemon/lime juiced (1 tbsp or so)

Instructions

  1. slice and freeze fruit (except lime/lemon)
  2. Put all fruit (including the lime/lemon) in a blender and blend until you get a smooth texture without any chunks. It might take a minute, so don’t worry about it and add extra liquid.
  3. Pour your mixture into a freezer-safe container. I used plastic containers, but you can use anything that works for you.
  4. Freeze 3-4 hours or overnight, until it’s completely solid (you can test this by touching the center, tipping the container, etc.)
  5. Allow to thaw for a few minutes before serving (you really won’t get it out too well if you skip this step!!)
  6. Enjoy!

Makes approximately 6 servings

Do you want to add a really fancy, cool touch to your sorbet? Turn it into a shaved-ice-like mixture! (I call it “Sorbet Snow”) Simply skip step number 5 and drag a spoon/butter knife across it, making little “snowflakes”. Have patience – it will take a minute! Keep in mind it will melt quickly this way, so don’t do it too early!
